Fast Healthy Meals: Fish on the Stove Top by Ernest J. Geeting,

Seems that everyone is in a hurry nowadays. We are busy people often too busy to eat
properely. Simple meals often mean runing through a fast food drive-through or phoning for a pizza delivery. Too
many times it seems we just don't have time to prepare a decent healthy meal and still make it out the door on time to
our evening commitments. On the nights we actually can enjoy and evening in we are too tired to prepare an elaborate
dinner so we end up yanking some heavily processed frozen pre-made meal out of the freezer and throwing it in the oven.
What if I could show you a way to have a healthy meal on your table in less than 20 minutes from start to finish?
Through my studies as a Natural Health Consultant and out of necessity of my own hurried life, I've come up with a number
of quick, simple, but healthy meals that not only have saved me time but money as well. In this series of online articles
I'd like to share some of them with you. Perhaps you and your family will enjoy them as much as I do.
One of the greatest quick meal discoveries for me has been fish. Growing up the in the Great Lakes region of the United
States having a quick fish dinner to me meant getting out the fry pan or deep fryer, dipping fish in a creamy batter and dropping
it in the hot grease. Throw in a couple of handfuls frozen french fries and a meal was in the making complete with calories,
transfats, and digestive upset! Not a very appealing method if you want to eat healthy. Another alternative was
baking your fish. However, baked fish to me always seemed too dry no matter what anyone did to it. The exception
was salmon. I still bake salmon when I have the time but baking isn't the fastest way to cook fish. The fastest
way I've found to prepare fish is quite simple. Are you ready?
Here's my 17 minute solution.
Start by buying fresh or frozen raw fish fillets. Nothing breaded or pre-cooked or containing any sort of preservatives.
Thaw if frozen and rinse completely, scrubbing lightly with your hands. Put the fillets into a frying pan with just
enough water (that's right, water) to about 1/2 cover the filets. Add a sprinkle of black pepper and a dash of sea
salt (you can experiment with other seasonings as well). A tablespoon of organic butter will really flavor the fish
nicely. Then just bring the fish to a boil, turn it over every few minutes, and continue boiling till just a small amount
of liquid remains. This liquid makes a very tasty broth you can drizzle over your fish.
While your
fish is cooking, heat or steam at least 2 types of vegetables on your stove top. Depending upon the vegetable you may
want to start them before your fish. Slice up some fruit for dessert and you have a complete meal. Everything will be
ready at about the same time. Fast, healthy, and embarrassingly easy.
